Nothing but nothing tastes like a Manx kipper, especially when washed down with a good bottle of champagne. Food for the gods we say. It is probably the anticipation that sets the mouth watering. The fish is smoked over a fire of oak shavings, so the first pleasure is a sense of smell, followed quickly by the unique flavour.

This dish is widely available, even in the finest restaurants, of which there are many throughout the island serving cuisine from around the world.
