The food industry is no different to any other industry in that persons employed require suitable training, instruction and supervision.
Official industry guides give advice on best practice and compliance with Legislation. They state that anyone who is handling or preparing food should be trained to "Level 1" standard. Such a standard can be reached by providing structured in-house training, or by sending staff on an accredited food hygiene course.
The Food Safety Unit offers the following training package:
Level 2 Award in Food Safety in Catering
This is classroom based training. Courses are of 6 hours duration and are usually run in 3 sessions. They are tailored to suit the particular needs of the business, and are generally held on a monthly basis.

What do you get on completion of the course?
Those who attend the course for its full duration and successfully complete the examination will receive the CIEH Level 2 Certificate in Food Safety in Catering, which is accredited by the Chartered Institute of Environmental Health. What are the costs of the course?
The current price is £30 plus £5.25 VAT per person. This includes registration, food hygiene handbook, examination entry, certificate and refreshments. Courses are normally held in Murray House, though on-site training is available at special rates for organisations that require staff training for numbers between 15 to 20.
IMPORTANT
Courses are run subject to a minimum number of 10 persons. A full refund will be given if we cancel a course. Cancellation or non-attendance by an individual following a confirmed booking incurs the full course fee to cover administration costs.
How do you make a booking?
You can book a course by completing a booking form. Download a booking form from the downloadable document table at the bottom of the page. Note - to book for more than 10 people, simply print extra copies as required.

What other courses do we run?
We also run Level 3 and Level 4 Food Hygiene qualifications. The Level 3 Award in Implementing Food Safety Management Procedures is aimed at mid-level managers and section supervisors, while the Level 4 Award in Managing Food Safety in Catering is aimed at upper management.
